Ingredients:
5 garlic
5 shallot
10-15 dried chillies(soak in hot water to softens)
-blend/grind all the above ingredients with a little bit of water until they turn to a paste
6 tbsp peanut oil/vegetable oil
3 cups water
2 cm fresh ginger(bruised)
1 lemongrass(bruised)
2 tbsp oyster sauce
1 tbsp Maggi concentrated chicken stock
1 tsp sesame oil
1/2 tsp Lea&Perrins sauce
1/2 tsp ground white pepper
1 tbsp vinegar
3 tbsp sugar
salt to taste
2 big size crab or 3 medium size crab (cut to two)
garnish:
1/2 tomato (diced or cut triangular)
1 fresh red chillies (slice to small pieces)
spring onions (slice to small pieces)
Method:
-Heat oil, sautee the blended/grinded ingredients with lemongrass and ginger until fragrant
-Add in sugar, salt and oyster sauce, cook until some separation can be seen between the ingredients and oil
-Add in water
-Add in the vinegar, chicken stock, Lea & Perrins, white pepper and sesame oil
-Bring to boil, add in crab and cook until sauce thickens and crab is cooked through.
-Add in pieces of tomatoes and chillies slightly before finish.
-Transfer to plate and garnish with spring onions.
Good to eat with hot, fluffy white rice or hot bread.
